Fish and forest

Two memorable and delicious food experiences arose from our business connections in the United States. Both involved boats, water and forests—the first was on the west coast in beautiful Puget Sound and Olympic Peninsula, and the other was on the east coast, on Mount Desert Island, which is the largest island off the Maine coast. Good food and wine and conviviality around a table so often provided us with an entrée to many business ventures, resulting in both commercial commitments and valued friendships. I first learnt about cedar-planked salmon in Washington State. A specialty of our hosts, we enjoyed this delicious method of cooking salmon on a number of occasions, most memorably cruising in Puget Sound and again out on a deck overlooking the beautiful Olympic Peninsula under a nearly full moon with volcanic Mount Rainier in the background.
